Eau De Vie @ Melbourne

A cocktail lounge that combines theatrical flair with a speakeasy-style intimacy in its dimly lit, jazz-inflected setting.

Eau De Vie boasts a menu comprising scores of original cocktails created by its bartenders as well as classics reinvigorated with fresh twists (or as the establishment’s co-owner Greg Sanderson puts it, “we give you new ways to drink old drinks”).

Noble Experiment (AUD$20), with vermouth, bitters & brine mixed with Ketel One vodka & prepared with liquid nitrogen.


It's a rousing highlight, with bartenders donning gloves and goggles at one point to ladle up the liquid nitrogen used to make ice-cold martinis. 


The result: Deliciously divine.

Also order the Ron Zacapa Blazer ($24), with rum flamed with walnut liquor, banana glaze & porter reduction.

Lady's Leg Cosmopolitan (AUD$100 for four persons), cranberry sorbet, Ketel One citroen vodka, Cointreau & lime juice ...

... prepared in a vintage 1930s cocktail shaker in the shape of a woman's leg, complete with a high-heeled silver shoe, served in champagne coupes & topped with bubbles.
